Annual Budget Countdown

I forgot to check in with you on Thursday for my Annual Budget standings. (gotta keep it honest here)

Since I last checked in I shopped a total of 6 times. Here is the damage:

Familytime Update

Here is a rundown of our day. The boys and I went to the gym this morning and then went swimming with our playgroup. On the way home from the pool Colby asked me to pray to Jesus and ask him to make it not rain tonight so he and Daddy could go camping in the backyard. I obliged but then told Colby that farmers were probably praying to Jesus for it to rain so I wasn't sure which prayer Jesus would answer. I then heard Colby pray to Jesus that he would let it rain for the farmers "the next day." (Dear Jesus, please keep that rain away!) Once home, Colby led us in a devotional time that had me riding on my swiffer mop through the house (Jesus on a donkey entering Jerusalem). We then had lunch and in honor of "shape day" I made English Muffin Pizzas with green pepper shapes (sneaky way to get some vegetables in).
After lunch the boys played outside while I cleaned the trash out of my car. Came inside for rest time. While boys napped/rested I cleaned, and cleaned, and cleaned. Sometime during the middle of rest time I caught Colby standing on a stool and I instinctively panicked and said "COLBY BE CAREFUL," Colby looked at me and said "Mommy your crazy, careful is my middle name." Careful is his middle name? Where does he come up with this stuff? After nap time Daddy got off work early and set up the tent while I made a Kroger run for a cookout. We had burgers and smores over the "campfire" (grill). Uncle Randy came over during the cookout and started pitching balls to the boys. Cohen, my 18 month old, swung and hit the ball (no tee) like 5 times (we got it on video). Boys sticky with marshmallow goo and covered with dirt so came inside for bathtime. After bathtime Cohen went to bed and Daddy and Colby went outside to camp. I watched my DVR and now sit at the computer.

Familytime Friday

Today is another crazy Familytime Friday. I tell you Monday's are always the better Mommy Day for me and the boys because I am well rested from the weekend. By Friday the house is a pit, I'm exhausted, the errand list has grown throughout the week, blah blah blah. Anyways... all I'm saying is I think the quality of Familytime Friday would be better if it was on a Monday. Maybe we could do Mommyday Monday and Food Friday? Just doesn't have the same ring to it though.... does it?

Last night I asked Colby if he had any ideas for "devotional time", "craft time", or "learning time" He said "Well.... we usually do craft time and devotional time, but we haven't done learning time in a looooong time." I agreed and asked him if he had any requests for learning time. He said "shapes." So there you have it folks today we will be looking at different shapes. Colby, at almost 5, already knows all of his shapes so we are going to work on drawing shapes and writing the names of shapes. CoCo, at 18 months, does not know his shapes so we will be looking at shape themed books and blocks.

Not sure what else will get accomplished today so I will just check in if we do anything post worthy. Have a fabulous Friday!

My randomness

Ok, here is a thought that has occupied many a thought on my commute to work:

First some background- I have a tendency to be very star struck. For example, one time I was at a hotel convention center for a conference when I saw Paige Davis from Trading Spaces. Ya'll I completely froze and just stared at her for the longest time with my mouth wide open (i know it was wide open because I felt some drool slide down my lip). Now, I was not close enough to actually speak to Paige and it was a good thing because I really feel the human language left me in that moment and I would have sounded like a complete idiot (not that a girl frozen in time with spit hanging out of her mouth could be mistaken for a genius). Anyways.....

To be honest my reaction to this star sighting caught me a little off guard. I didn't even know I was that big of a fan- I mean sure, my neighbor and I had sent in an audition tape in hopes of getting selected to "trade spaces" but it wasn't like I had googled the cast or anything. I concluded that my breakdown was simply due to lack of preparation. You see, I had never formulated a "plan" for what do do if I ever had a run in with a star. Once I figured out the problem I vowed that I would never let a star see me drool again. Thus many hours of road time have been devoted to practicing my response to chance encounters with various actors and actresses in a series of "what if" scenarios.

I would love to tell you about my run in with Tom Cruise, but it is kind of a long story and I really need to start working on your Thrifty Thursday posts. Soooo I tell you what- if 5 people will leave me a comment that they want to hear about how the Lord used me to show Tom "The Way" I will share that story next Wednesday. Ta Ta for now!

Happy Hump Day! Sorry I'm just now checking in with you. Last night I watched too much TV (Idol and Biggest Loser) and then spent the night looking for carebears on the Internet... long story.. Anyways... I didn't get anything scheduled to go out today. Soooo I thought it might be a good day for another day of randomness. As soon as I can remember my Mr. Linky password I'll put one up so you can record your random thoughts. So what's on your mind....

My Ideal Car

I once heard a story of a lady who found a luxury car listed in the classifieds for $1. Thinking it had to be a misprint she called to find out about the true price of the car. Turns out the car belonged to a lady who was going through a divorce and was being forced to split all assets with her ex husband and therefore was selling his beloved vehicle for $1 to get back at him.............
Now, I would not wish a divorce on anyone nor do I support the idea of revenge BUT if you hear of anyone who wants to sell their vehicle for $1.00... I'm in the market. That's all I'm saying.....

No really... I have had lots of time to think about my "ideal" car and here are the top 10 must haves for my "new to me" car.

1. FOUR DOORS
2. Power Steering
3. Radio (CD player would be bonus!)
4. Muffler
5. more than 2 doors
6. Air Conditioner available during ALL seasons
7. Rain proof windows
8. Screech Free Reversing
9. Built during this century
10. Oh and.... FOUR DOORS!!!!!!!

Specifically DH and I are looking at 2005-2007 Honda Accords or Civics or Toyota Camrys with under 60,000 miles. Although... I have registered to host an American Idol Watch Party and if selected I could be eligible to win a loaded Ford Fusion and that would totally be ok too!

Zone 5- Laundry Room, Car, Outside

Day 1- Tuesday
  • Wipe down Washer and Dryer
  • Organize Laundry cabinets
  • Sort through and toss all out of date medications

Day 2- Wednesday

  • Clean Laundry Floors
  • Clean behind washer and dryer (odd months only)
  • Clean out Lint trap (even months only)
  • Clean Trash Can

Day 3- Thursday

  • Clean out all of car clutter
  • Vacuum inside of car
  • Clean carseats
  • Wipe dust off dashboard and paneling
  • Wash car

Day 4- Friday

  • Organize garage closet
  • Organize tools and tool bench
  • Organize right side of garage (odd months)
  • Organize left side of garage (even months)
  • Sweep out garage

Day 5- Saturday

  • Clean up flower-beds
  • Change wreath on door
  • Sweep Porch

Tidy Tuesday

Well, we are back to the Car Zone once again. Just for fun I think I'll post before and after pictures again sometime this week because it amazes me how much clutter can pile up in 1 two-door car in a 5 week period. And the fact that I just wrote before AND after pictures means that I will have to actually clean the car to enable the "after" picture to post. PLUS....... here comes some really REALLY REALLY exciting news... This might be the last car zone cleaning for "my car." Woo Hoo!!!!!

Yes! This weekend I received a gift that enabled me to meet my car savings goal 3-6 months earlier then expected. Yep, pick my jaw up off the ground- totally unexpected GIFT! Soooo you know what that means...............1) I am in the market for a good used FOUR DOOR car and 2) "My Car" is available!!!!

Fire Update

I just wanted to say a quick thank you to all of you who have been praying for Sean and Emily M. I got to visit with Emily tonight and although I don't think the full reality of what has happened or what is to come has fully set in, I can tell you that Emily says she can "feel God working" and that she has an indescribable "Peace" about the situation.

Oh Emily, the journey has been long and hard. But what beauty God can create out of the "ashes" in our lives. I have watched you over the past few years persevere like no one I have ever known. You inspire me and have been my rock even when your own world was so hard. I love you and I am SO BLESSED to have you as my friend! You and I will always share that "three strand" in our friendship. Yes, as Jonathan loved David, I love you the same! Many blessings will come your way! And what a crown awaits you in heaven, my dear friend, for the incredible person you are!!

The "McCarron Relief Fund" will be set up tomorrow morning at RiverTown Bank for those interested in helping.

Pepper-Avocado Omelet

Although I won't be making this recipe this week, I have made it before and it was delicious!! As I am sitting here looking at the recipe my mouth is watering and I am wishing I hadn't decided to skip this recipe this week.

Pepper-Avocado Omelet
Warning: the recipe calls for manchego cheese- I did splurge with this cheese last time BUT it was $9!!!! I remember thinking I would use shredded Parmesan cheese next time. I also used egg beaters instead of whole egg and substituted PAM for butter to lighten up the recipe.

Nutrition Information:
Serving Size: 1/2 of recipe including the Fresh Tomato Compote
Meal Plan: 509 Calories (original recipe, down at least 100 Calories with modifications), 2 meat, 1.5 starch, 2 vegetable, 5.5 fats (yes, that is a lot of fat but you eliminate 2 when you switch to egg beaters and PAM, and the avocado is a good monounsaturated fat so I still approve this recipe!)



Taco Beef Pot Pie

Ok Ladies- this was the winning recipe at the recipe exchange party I went to a few weeks ago. And no surprise- it is a Gray W. recipe. Gray + winning recipe = yum yum. Even modified this recipe will be a little heavier in calories but I think you'll agree it's worth it!

Taco Beef Pot Pie

2 cans reduced fat crescent rolls
1.5 pounds ground sirloin
2 cups (8oz) shredded 2% velveeta
1 can rotel
1 pkg taco seasoning
1 tbs Worcestershire sauce
1/2 cup 2 % cheddar

Optional: sour cream and salsa

Preheat oven to 375. Unroll 1 can crescent rolls and press into a pan lightly greased 9x13 dish. Bake for 10 minutes until lightly browned. Cook meat in skillet until brown and crumbly. Drain meat. Stir in cheese and remaining ingredients Spoon over crust. Unroll remaining can of crescent rolls. Press together to make a rectangle. You can cut 1 inch strips and make a lattice design (Donna style) or just place the crescent rolls over meat mixture (Niki style). Bake for 15 minutes. Top with sour cream and salsa if desired.

Pecan Crusted Fish with Peppers and Squash

I thought this looked like a yummy recipe. Although I will tell you, you might want to wait a few more months to try this recipe when the squash is in season because they were looking pretty pitiful at the store yesterday.

Mealtime Monday

Gotta admit I was not in the mood for cooking yesterday- but alas I got er done. Once again I am not sure of the final prep time because I piddled.... a lot, BUT I have zero doubt it could have all been done in under 1 hour and 30 minutes. I actually just prepped for 4 dishes (although I will still provide 5 recipes for you) because we never ate the Manicotti last week (went out so we wouldn't mess the house up the night we showed it). The dish I chose to exclude from our week's menu was the omelets. Can I just tell you that I am already regretting this decision because the recipe is soooo yummy! But anyways here is a list of what I DID prep last night:
2 Pecan Crusted Fish
2 Pepper, Squash, Zucchini Packets
2 Taco Pot Pies
2 Dixie Pork Chops
2 Vegetarian Chilies
2 Cornbreads
Here is the menu and storage schedule for the week:

Monday- Pecan Crusted Fish with Peppers and Squash. I fully prepped this dish up until final baking and stored in fridge. I chose to do the vegys in an aluminum foil packet. Tonight I will simply take fish and vegys out of fridge and bake according to recipe.

Tuesday- Dixie Pork Chops. I ran out of baking dishes so I did not brown pork yet, but if I hadn't run out of dishes I would have completed steps 1 and 2 of the recipe and stored in fridge. I have already cut up apples and measured ingredients so it shouldn't take too long to brown pork and finish up recipe Tuesday night.

Wednesday- Vegetarian Chili. I dumped all ingredients into a freezer ziplock. I stored this in fridge BUT it could have easily been stored in freezer. Wednesday morning I will dump into crockpot and cook on low all day.

Thursday- Manicotti/Omelets- I am going to have the Manicotti from last week BUT if I was to do the omelets I probably would not have preprepped for this dish. I would have just prepared the night of.

Friday and Saturday- Out or leftovers

Sunday- Taco Pot Pie. I fully prepped up until final baking and stored in freezer. Saturday I will transfer dish from freezer to fridge. Sunday after church I will pop in oven for final baking.

Last weeks meals in review

I thought I would go ahead and provide another review of the previous week's meals.

Spicy Seafood Stew- We really liked it. DH even commented on how good it was. I will definetly make this again and I will always have this dish with cornbread- yummy.

Black Bean Soup- Always great. I loved having this for lunch all week. If you are new to fiber- bowels beware. Even my iron clad colon had issues after 3 days of soup in a row. I'm just saying...

Chicken Manicotti- Ask me Thursday....

Apple, Cheddar Meatballs- Well..... mine actually burned a little in the crockpot so I don't think I would be the best judge for this dish. BUT the other family I cook for REALLY enjoyed them. So there you go! Definitely cook these on low and check on them around hour 6 to prevent burning.

Chicken Fajitas- Can you really mess up Mexican?

On the first day of the week, very early in the morning, the women took the spices they had prepared and went to the tomb. Prayer Request

During Easter Service this morning our good friends Emily and Sean were called out of church to be told their house was on fire. For those of you who have been long time readers of DRS you will remember Emily's guest post a few months back. I can not imagine what this family is going through right now..... I really have no words. Please be in prayer.

This is a time when human wisdom can't fathom the "WHY!" I anxiously await God to reveal His Plan in this tragedy. Only He can (and will) bring beauty from these ashes.
