Crockpot Roast with Carrots and Potatoes

Can't get much simpler then this recipe. And yet oh so flavorful. Just to let you in on a little secret, I don't ever take the time to brown my roast before I put it in the crockpot- perhaps I should, but it has always tasted just fine without this step.

Serving Size: 1/8th of recipe (this is a huge serving, could easily do a smaller serving size)
Meal Plan: 540 Calories; 6.5 oz meat, 1 starch, 1 vegetable, 3 fats (would be a lot less with smaller serving size and could choose a leaner cut of meat)
