Blackened Chicken Salad

When planning this month's menu I wanted to include a blackened chicken salad. I ran across this recipe on allrecipes.com and just had to try it. I'll let you know how it turns out.

Blackened Chicken Salad
I am not a fan of olives so I left them out. For simplicity's sake I also left out the arugula. I used PAM instead of the oil. And I doubled the dressing and lettuce so that we could easily serve 4.

Serving Size: 1/4 of recipe according to my modifications
Meal Plan: ~260 Calories, 3 very lean meats, 2.5 vegetables, 2 fats

At only 260 Calories, this might be a good night for the fam to check out the new Cold Stone Creamery!
