Black Bean Soup

If you didn't try this recipe last time I posted it, I'd highly recommend giving it a try soon. I think I could make this recipe every week and never grow tired of it. In fact I bet we will have this soup again the week of the Pantry Challenge.

I use chicken broth instead of the vegetable broth and I like to sprinkle just a little bit of Lite Mexican Blend cheese on top!

Serving Size: 1/4 of recipe (my guess is about 1 cup)
Meal Plan: Calories: 241 (without cheese) 2 lean meats, 2 starches, 12g of Fiber!!!
