Mexican Casserole

This recipe was one of DH favorites growing up. I requested the recipe from his mama and have made some minor adjustments to lighten it up a bit. DH still requests this dish every year for his birthday. All my boys will be excited to see this dish on the menu this week! Hope your family enjoys it too!

Mexican Casserole

1 lb. lean ground beef cooked seasoned with taco seasoning
1 can healthy request cream of mushroom soup
1 can Ranch style beans (or can use chili beans)
2 cups 2% Mexican cheese blend
1/2 bag of Baked Doritos
Green Pepper

Preheat oven to 375 degrees. Crush Doritos and pour into bottom of a 9x13 baking dish (might want to use some PAM first). Next layer 1/2 of seasoned beef and 1/2 of beans followed by can of mushroom soup and 1/2 of cheese. Repeat with rest of beef, beans and cheese. I like to slice Green Pepper into rings and place on top of casserole. Bake about 30 minutes or until cheese is melted.
