Southwest Stew

I'll admit this is another recipe I have yet to try but it looks pretty safe. I am going to attempt this recipe in the crockpot. To make this dish crockpot ready I will brown the beef first and then add an additional 1 cup of water to the recipe. I'll cook on low all day and then come home from work to a hot bowl of stew. Kinda makes me look forward to my work day.

Meal Plan: Calories: 290, 3.5 meat and 1.5 starch, 1/2 vegetable

I will serve this with southwest cornbread (cornbread with green chilies).
