Pinto Bean Burritos

Knock out your fiber in one meal with this recipe! Those new to fiber beware! This is one of my favorite meals. Embarrassingly quick and easy and oh so cheap!


Pinto Bean Burritos

at least 2 cups Dry Pinto Beans (I like to make extra to be used in future recipes or for leftovers)
1 TBS Ham Bouillon
1 TSP Cumin
Lite Mexican Blend Shredded Cheese
Mission 10 oz Carb Balance Tortillas

Place desired amount of beans in crock-pot. Add enough water to cover beans by 1 inch. Add bouillon and cumin. Cook on low for 8-10 hours or high 4-6 hours. (All crock-pots are different so you might have to experiment with settings and time.) Place 1/2 cup cooked beans in center of warmed tortilla add 1/4 cup cheese, roll up and enjoy!

I am going to serve this with a side salad. To add to the Mexican Flavor I am going to add some taco seasoning to lite ranch for my salad dressing.
